I think the recipe originally called for a can of corn but I didn't have any the first time so I left it out and forgot about it. I might add it back in next time!

One of our favorites I call it vegan egg salad

shred a cake of baked teriyaki tofu as the "egg"- like nasoya
some diced celery
some sweet pickle relish
some hot mustard
some vegan mayo

stuff in pita with lettuce

Also the same as poster's above but we just dump a jar of salsa into a bowl and add black beans, frozen corn, jalapeno, red onion, kidney beans sometimes I get fancy and squeeze lime over it.

Also, although obvious, is the hummus/veggie sandwich and sometimes I make up a batch of falafel and cook it into patties and freeze them so I can put those in the toaster oven when we need quick sandwiches.

Sweet potato or butternut squash puree as pasta sauce, add veggies. Works well with pureed sweet peas as well.

about potatos this probably won't help, but when we got fresh dug potatos and carrots from our farm share last year in september- they were great when we ate them in MARCH. seriously, no roots no nothing. carrots too. it made me really wonder how old the potatos we get at the supermarket are, because we can't eat them quickly enough to merit buying a whole bag, but then if I buy just 4 I don't end up back at the store quickly enough.
