Re: What's for dinner this week...May 11th - 17th

Monday: lasagna
Tuesday: If all goes well with my son's food challenge for eggs tomorrow, we're going to eat breakfast burritos. If not, then we'll probably try out a new recipe that I saw on Everyday Italian/Giada at Home called crunchy parmesan chicken tenders. Probably with buttered orzo (my kids love orzo!) and green beans.
Wednesday: Maybe the chicken tenders if we don't have them on Tuesday. Otherwise, no clue yet.
Thursday: Tacos and corn. My kids both have soccer practice, so Thursdays are usually something quick and simple.
Friday: We'll probably be at my in-laws as some family is coming in from out of town.
Saturday: We'll probably do something with my parents.
Sunday: chicken enchiladas and spanish rice (that I love! I got the recipe Cooking Light a year or two ago and it's the best spanish rice I've ever had.)

I almost never make pre-packaged food for dinner, but Costco had a coupon for frozen orange chicken. We had it last night and I wasn't that impressed. I need to find a recipe!

For the chicken strips, there is the recipe. I omit the cheddar and use all parmesan. I omit the salt and the chopped garlic (the garlic powder is plenty!) They are sooooooooooooooooooooooooo good
