Honey would work, but you'll need to cut down the liquid in other areas.

Re: sugar replacment?

I would just reduce the amount of sugar and see how you like it. That won't change the taste or texture of the bread like adding substitutes can.

That said, I do like Rapunzel's Rapadura (evaporated cane sugar), it tastes carmelly and rich, and has lots of iron like molasses.

if you still aren't happy with that, there is an organic, natural type of no calorie sweetener you can try - I've ordered some for my dh who insists on buying artifically sweetened drinks, so I can make him no-calorie iced tea this summer instead. This is where I bought from - hasn't arrived yet so I can't give a review yet - http://www.azurestandard.com/product.php?id=SW182

i dont mind evaperated cane sugar - less processed, less refined sugar would work.
