You can google how to make mozarella cheese (it's kind of fun) and then from the leftover liquid you can make ricotta. I use a gallon of milk to make the cheeses.

Definitely cheese! I've made paneer (an indian cheese which is kinda like mozzerella) YUM! I was thinkin' soups - yogurt like everyone said. I wonder if you could make ice cream or frozen yogurt - I would think that would keep longer also!

Also - I've heard many people who can't tolerate cow's milk are alright with goat's milk, but I don't know if WIC would cover it.

I love to make cream of corn soup when I have extra milk, ice cream is another awesome option, you have to add some egg yolks to get it custardy.
I've made my own Paneer a few times, I looove Indian Food. I got the directions for making Paneer off of google, I don't remember the link. Paneer is a type of cheese that replaces meat in vegetarian Indian dishes and really sops up spicy sauces.
