Pancake help

OK, please don't laugh..

I am so not a cook but I thought I would try and make pancakes on my own. IE..no mix..

I used..

whole wheat flour
olive oil
2 eggs
milk..

They came out super flat and kinda chewy

What did I do wrong..

Am I missing something?

Baking powder and a pinch of salt + 1 T sugar.

Buttermilk makes 'em good too.

What are your proportions of flour/milk/eggs?

I used 2 eggs,
1 cup of flour,
and I just added milk until it was runny enough...

Here's my recipe (tried and true)

1 c. flour
3t. baking powder
1 T sugar
pinch of salt

mix together. Then add the next ingredients (mixed together)

1 egg
3/4 cup milk or buttermilk (you can always just add 1T lemon juice to make the milk into "buttermilk")
2T melted butter or olive oil
1/2 t vanilla

I often add 1 c. blueberries (frozen). Just thaw and drain first.

Our Favorite Pancake Recipe

1 egg
1 c wheat flour
2 tbsp cream of wheat
1 tbsp wheat germ
3/4 c milk
1 tbsp sugar
2 tbsp vegetable oil
3 tsp baking powder
1/2 tsp salt
(opt frozen blueberries)

Beat eggs with hand beater til fluffy. Beat in remaining ingredients til smooth.

How many "average" size pancakes does that recipe make? Dh eats a lot

*butting in* I always make a double recipe and freeze whatever is left. Makes it super easy when the kids want pancakes and I don't have time to make them from scratch.

what does the cream of wheat do? I always put wheat germ in mine - but just wondering

cream of wheat makes them fluffier, kinda like the country griddle cakes at IHOP

I think this makes about 9 4" pancakes.
