What is your favorite eggplant dish?

I went to a potluck years ago and had this awesome eggplant dish. It was sooooo yummy. Then two weekends ago I had indian food and there was this yummy eggplant thing. IDK the name of it but omgosh it was good. SOOOO, Give me your eggplant dishes I want mooooooooore! Thanks in advance.

Ratatouille is yummy, even my kids eat this up! this is how I make it:

Saute in some EVOO a few cloves of garlic, an chopped onion, chopped bell pepper, on low until starting to get soft, then chop up the eggplant, a couple zuchinnis, and a package of mushrooms throw all that in there, add a can of diced tomatoes, some dried parsley and basil, and some salt and pepper, cook til every thing is tender. Serve over rice or pasta, or my fave a crusty french bread, with some parmeson cheese mmmmm...Oh and I like to soak the eggplant in salted water after I chop it up for a few minutes, then rinse, it takes the potential bitterness out.

Here's my favorite eggplant. We have it nearly everytime there is an eggplant around... although I've been meaning to try ratatouille...

slice the eggplant thin
(here you can (1)spread the eggplant out on a baking sheet that has been slathered with olive oil, brush more o.o. on top and sprinkle salt & pepper on top-bake in oven at 350 for 15 minutes. watch carefully, when it starts to brown it's done----or----(2)bread the eggplant by dunking in flour, then 1/2c milk + one egg, then dredge in flour breadcrumbs that have shredded parmagiano and salt and pepper in it. then fry it in a pan on the stove in o.o. until brown and crispy. drain on a paper towel)
after you've cooked the eggplant, layer it on a baking sheet as follows:
eggplant, fresh sliced mozarella, eggplant, moz., eggplant, moz. (three layers is about as much as i can eat )
bake in 350 oven for 10-15 minutes until cheese is melty, broil for a minute at the end to brown top cheese layer.
serve with pasta or bread and with tomato sauce of your choosing over top

enjoy. option 1 is less labor intensive, but option 2 is soooooo good.

I HATE eggplant, BUT I made this dish for a vegetarian friend and even I loved it!! It's from recipes.com I served it with cumin rice. It was fantastic!

Vegetarian Shepherd's Pie

SUBMITTED BY: USA WEEKEND columnist Jean Carper

Servings 6

* 2 tablespoons extra virgin olive oil, divided
* 1 large yellow onion, roughly chopped
* 4 cloves garlic, crushed
* 2 tablespoons curry powder
* 2 teaspoons ground cumin
* 2 small red or green bell peppers, chopped
* 3 cups cubed eggplant, with peel
* 1 (15 ounce) can diced tomatoes
* 1/2 cup water
* 1 1/4 pounds small red potatoes, halved
* 1/2 cup fat-free half and half (or milk)
* 1 cup frozen or fresh peas
* 1/2 cup grated Parmesan cheese
* 1 pinch Salt and freshly ground black pepper to taste

DIRECTIONS

1. Preheat oven to 400 degrees. In a large skillet over medium heat, heat 1 Tb. oil; add onions, garlic, curry and cumin. Saute until onions are soft, about 5 minutes. Remove to a bowl.
2. Heat remaining oil in skillet; add peppers, eggplant, tomatoes and 1/2 cup water. Saute until soft, about 20 minutes. Stir in onions. Place in a shallow 8-by-8- inch baking dish.
3. In a saucepan, boil potatoes until done. Drain and smash. Stir in half and half, peas, salt and pepper. Spread over vegetables and top with Parmesan.
4. Bake 15 minutes. Brown in broiler. Serve

The best in the world is Moussaka!!! It is so good. It is greek and like a eggplant lasgana. I am sure you can google it for recipes! I have never made it but I get it everytime we go out for Greek.

I am going to hunt down some eggplants and try each and every one of you guys suggestions.

Thank you soooooooooooo much. I just love eggplant.


Here is mine, simple but yummy.

I slice the eggplant length wise. put a thin layer of EVOO on each side, salt and pepper then I grill them until there are brown grill marks on each side and the eggplant becomes soft.

( I use the geroge foreman grill )
