My Granny's SUPER SIMPLE & SUPER YUMMY COBBLER recipe

I love apple cobbler....but my Granny makes apple or peach or cherry

-preheat oven to 350
-put 1 stick butter in cake pan to melt in oven
mix :
1C. Self rising flour
1C. Sugar *I add 1 tsp cinnamon*
1C. Milk

-once butter is melted pour your mixture into the pan with the butter(no need to stir)

-spoon 2 Cans of Apple Pie filling (peaches[drained] or Cherry Pie filling) right on top of the mixture you just poured into the pan...no need to stir

-Bake until golden brown on top...edges get nice a crisp...fork will come out clean when inserted into breaded area!

Groundnut Stew recipe - from Fix-it and Forget-it Cookbook, altered a bit by me.

2 green or red peppers, cut into rings
1 medium onion, cut into rings
1 tbsp oil
6-oz can tomato paste
3/4 cup peanut butter
3 cups chicken broth
1 1/2 tsp salt
1 tsp chili powder
1 tsp sugar
1/2 tsp ground nutmeg
4 cups cooked chicken, cubed

In a frying pan, heat oil. Add peppers and onions and fry until softened. Transfer to slow cooker. Add all of the rest of the ingredients to the slow cooker and stir to combine. Cover and cook on low for 3 hours. Serve over hot white rice.

This recipe is really great for using leftover chicken, or simple to make using one of those store-bought rotisserie chickens. I find that I get about 4 cups of meat off a whole chicken.

Faith's Sweet Potato Bread

From Taste Of Home

1 cups all-purpose flour
1 cups sugar
1 tsp ground cinnamon
1 tsp ground nutmeg
tsp baking soda
tsp baking powder
tsp salt
2 eggs
1 cup mashed sweet potatoes (I use the canned yams)
cup canola oil
1/3 cup water

In a large bowl, combine the first seven ingredients. In a small bowl, combine the eggs, sweet potatoes, oil, and water. Stir into dry ingredients just until moistened.

Transfer to a greased 9 x 5 loaf pan. Bake at 350 for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes in pan before transferring to wire rack.

Buttery Baby Pea Soup

2 pounds frozen green peas
4 tablespoons butter
2 (14.5-ounce) cans reduced sodium chicken or vegetable broth
2 medium onions, roughly chopped
Kosher salt and freshly ground black pepper
1/2 cup sour cream, for garnish (optional)

Melt butter in a large pot over medium heat. Add onions and sautee lightly until translucent (don't let onions brown.) Add broth and peas and bring to a boil. Simmer over medium heat for 7-10 minutes. Puree using an immersion blender. Season with salt and freshly ground pepper. Serve with a dollop of sour cream on top, if desired. Great accompanied by garlic bread!

super easy veggie soup

cut up-
3 large carrots
3 large potatoes
1/2 head of cabage
large handful of fresh green beans

add all to a large pot w/ cabage on top
add
2 cans of stewed tomatoes/salt/pepper
add water until veggies are mostly covered.
Bring to a boil
simmer until carrots/potaoes are done


CHICKEN CASSEROLE

-boil and de-bone small whole chicken

-preheat oven to 350, put a stick of butter in a cake pan and melt in oven while preparing rest.

-mix/bring to simmer=
2 cans cream of chicken soup
1 can chicken broth (or use broth off of boiled chicken)
1 4oz. sour cream

----should be slightly soupy(not too thick)

-add as much chicken as desired

take pan w/ butter out of oven and mix 2 boxes of stove top stuffing in butter w/ fork! Then pour soup/chkn mixture over stuffing, mix up and put in oven until Golden brown on top/edges!

Wonderful /w a fresh salad...peas...corn...just about anything

Taco Soup:
3 cans beans (says pinto/kidney/black, but I use whatever is here)
1 jar chunky salsa
2 cans diced tomatoes
1 can corn
(include all juices from cans)
taco seasoning
garlic salt

Chuck all in crockpot and let it cook, lol. We usually eat it with tortilla chips or corn tortillas/chips.

Faith, I do the same taco soup, but ours has hamburger (prebrowned) and we use a can of mexicorn and a can of rotel instead of the salsa!
