Fast and easy vegetarian recipes please!

I have a 6 week old, so it's really hard for me to spend a lot of time in the kitchen during the day. I need some fast and easy vegetarian meal ideas! Eating the same thing every day is getting boring

Last night I made slow cooker stuffed shells. It was easy but did take some prep time. Though you could easily do parts of it (chopping onion and garlic the night before)

Next time I'd definately use a little less spinach and add mushrooms and saute them with the onion and garlic!


Slow Cooker Spinach-cheese Jumbo Shells and Garlic Greenbeans

1 (12 ounce) package jumbo pasta shells
1 (32 ounce) jar spaghetti sauce
2 cups cottage cheese
2 cups shredded mozzarella cheese
1/2 cup parmesan cheese, grated or shredded
1/2 cup diced onion
2-3 cloves chopped garlic
1 cup spaghetti squash puree (optional)
2 tablespoons italian seasoning
1 (10 ounce) package frozen spinach, thawed, and squeezed dry

Cook shells until almost done, while they're cooking, saute onions and chopped garlic then combine with cottage cheese, mozzarella cheese, parmesan cheese, and italian seasoning, saving some mozz cheese for the top.

Drain shells and set aside. Mix spaghetti squash puree with tomato sauce, I always add a bit of italian seasoning and garlic powder to canned sauce as well. Pour 1/2 of sauce mixture on the bottom of your crock pot. Stuff shells with cheese mixture and layer on top of the sauce. Pour remaining sauce over the top of the shells and sprinkle remaining cheese over the top. Cook on low for 4 hours.

I'm making this this week too! It seems easy at least

Black Bean Stew
1 bag of dried black beans with cooking liquid (soaked/rinsed/cooked) or 2 cans (if I use canned, I drain/rinse & add more water)
1 onion, chopped
1 bell pepper, chopped
1 jalapeno pepper, chopped & seeds removed
Leftover cooked basmati rice (about 1/2-3/4 cup)
1-2 cans organic fire-roasted tomatoes (depending on your taste)
Lots & lots of chopped garlic (3 or more cloves, I love garlic, so I put tons)
2 tsp coriander
1 tsp oregano
2-3 tsp cumin
Salt & pepper to taste

Throw it all in a big pot, cover & cook until all the flavors meld together. Serve hot w/cheese on top & dollap of sour cream (and in my case lots of hot sauce!). It's great the first time, but even better the next day!

Here is one of my favorites, even my picky meat loving husband and kids eat this with no complaints

Lentil Tacos

* 3/4 cup dry lentils (brown ones)
* 3/4 cup dry brown rice
* 4 cups water
* 4 beef bouillon cubes (or chicken, vegetable)
* 4 teaspoons chili powder
* 1 teaspoon cumin
* 2 teaspoons onion powder
* 1/2 teaspoon garlic powder

Directions

Dump everything in a medium pot and boil. Turn down the heat to a little lower than medium and cook covered (just like rice) until done. I usually stir every 5-6 minutes, but you probably don't need to once the spices are mixed! Use just like regular taco filling.

I second this. Only I used a carton of veg broth instead of the water and bouillon it was sooo yummy!

Taco Soup:
3 cans beans (says pinto/kidney/black, but I use whatever is here)
1 jar chunky salsa
2 cans diced tomatoes
1 can corn
(include all juices from cans)
taco seasoning
garlic salt

Chuck all in crockpot and let it cook, lol. We usually eat it with tortilla chips or corn tortillas/chips.

Also, stirfry is always super-cheap. You can add tofu or just use veggies. We use a stirfry veggie mix from Costco with baby corn and sprouts and water chestnuts and all that good stuff.

i love this cookbook for quick and easy (mostly) vegetarian meals!

this time of year, we've been making lots of salads with fresh greens for dinner--with good cheeses, nuts, dried fruits, hard boiled eggs, etc... and you could prep a lot of ingredients when you have a moment and it could make several meals!
