Tonight is Taco Salad:

1 pound-taco meat, cooled.
1- 15 ounce light red kidney beans, drained and rinsed
1 -15 ounce diced tomatoes or fresh cut up tomatoes
shredded mexican or colby jack cheese
honey catalina dressing
1 bag chili cheese fritos


Ground beef with seasonings; 1 tbs. chili powder, 1/4 tsp garlic powder, dash salt, dash pepper and 1/4 tsp cumin (taco seasoning).
Brown and drain off grease, add spices, let cool.

In a large bowl:
Shred your lettuce, add beans, tomatoes, cheese, taco meat, and fritos. Toss to mix well. Fold in dressing to coat lightly.

Serve and enjoy.

This is a favorite of all my family members, even the picky ones.

I'm not sure.. I made some bread today(yay!) so I might make some pasta to go with it? I am hoping to drag hubby to the mall too, so maybe foodcourt healthfullness! lol

Tonight is a simple meal because dh is working late (his first ever meet the teacher night!!) and I want something simple for me and the kids that I can easily warm when he gets home.

So we're having Black bean and cheese quesadillas

Tortillas
Black beans
Cheese
Jalapeno (or other pepper of choice, or none)
Corn

Put it all in the tortilla, cook in pan with olive oil or butter and top with tomatoes and sour cream when done. Seriously like the easiest meal I make.

Except for when I make my own tortillas...I haven't done that in about a month though.

Can I come over to all of your houses for dinner? Gosh, I need to open up our dinner options because everything we do is always the same ol, same ol every month.

Tonight I think I'm doing fish and fries. I wanted to do some chicken/potatoes/carrots in the crockpot but forgot to start it early enough, so that will probably be tomorrow.

I made home made baked ziti, garlic bread, and fresh tomatoe and cucmber salad with red wine vinegar/sal & pepper.

That is my FAVORITE taco salad recipe except I use doritoes for mine!
