Anyone have a recipie for somwhat healthy Zucchini Bread?

We have a ton of zuchinni in our garden, and I was planning on making some zuchinni bread, but the one recipie I have calls for almost 2 cups of sugar (seems like a lot) Anyone have any other recipes for somewhat healthier Zuchinni Bread?

You could modify the recipe you have - here are some things I do when I bake -

improve the fats - replace veggie oils with coconut oil or pasture butter, or half and half of each

use pastured eggs (omega 3 eggs)

add protein - puree 1/4 to 1/2 cup of unseasoned cooked beans (white, pinto or navy) with the egg and any liquid the recipe calls for

reduce the sugar by at least half, and replace some of it with dehydrated cane sugar which is high in iron like molasses but much less strong tasting

add more zucchini than the recipe calls for - you can get away with quite a bit more if you grate it then lay it out on a towel, and roll up the towel to soak up the excess liquid for a while.

Zucchini Bread
2c shredded zucchini
2c raw sugar
1c sunflower oil
3 eggs

mix/cream toegther.

once mixed well add:
1 dash nutmeg
3c whole wheat pastry flour
1tsp cinnamon
1tsp salt
2tsp vanilla (whoops, I left this out!)
1tsp baking soda
1 1/2tsp baking powder
3/4c walnuts

bake @ 350 45-60 min
makes 3 loaves

I will check with my mom in the morning. I think she makes hers with home made applesauce instead of all the "fatty-sugary" stuff--but I could be wrong, it may be banana bread she makes that way. I will check in the morn though. It is 10:30 here and I don't think she would appreciate me calling now!

I would cut the sugar in half at a minimum. I use applesauce instead of oils. Makes it more moist as well. Use equal amounts ( 1/2 cup oil= 1/2 cup applesauce.)
