Need a made from scratch cake recipe

Super Chocolate Cake
out the Best of the Best and More cookbook
from the Best of Bridge series

this is pretty foolproof
1cup white sugar
3tbsp butter, room temp
1 egg, beaten
1/2 cup cocoa, fill with boiling water to make 1 cup of liquid
1/2 tsp baking soda
1/2 cup boiling water
1 cup flour
1 tsp baking powder

cream together sugar and butter, add egg and cocoa liquid. Mix soda and boiling water. add this, flour, and baking powder, mix well. Pour into greased 9" square pan (batter will be thin). Bake at 350degreesF (180C)for 30 minutes or until toothpick inserted in center comes out clean. (this cake doubles well. bake in a 9x13" pan or a bundt pan for 40-50 minutes)

Hope that helps...add some classic butter icing (I usually find a recipe on the back of my icing sugar bag and add a bit of cocoa if I want it extra chocolatey!)

Making a good white/yellow cake from scratch is kinda hard IMO. They tend to be dry and not taste as nice as the box mixes. But I do have a killer chocolate cake recipe we use a lot!

Boil together:
2C sugar
3/4 C butter
1 and 1/2 C water

Then beat in:
2 eggs
1tsp vanilla
2 C flour
1/2 C cocoa
1/2 tsp salt
2 tsp soda

Pour into greased 9x13 pan and bake at 350 for 35 minutes.

Here is the white cake I made for my 4 yo on her birthday because she requested "vanilla" cake

It was pretty good, I just really don't like white cake

1 C sugar
1/2 C butter (I always melt mine)
2 eggs
2t vanilla
1 and 1/2 C flour
1 and 3/4 tsp baking powder
1/2 C milk


Bake at 350 for 30-40 minutes in a greased 8x8 square pan.

I make this one almost every SUnday Looks like it's very similar to the pp.

Stove Top Chocolate Cake

1 cup margarine
1 cup water
6 Tbsp cocoa
2 cups sugar
2 cups flour
2 eggs, slightly beaten
½ cup buttermilk (I use reg. milk with a splash of vinegar)
1 tsp baking soda
1 tsp vanilla
Preheat oven to 400. In saucepan,
mix together margarine, water, and
cocoa and bring to a boil. Remove
from heat. Sift together the sugar
and flour, and add to the saucepan
mixture. Combine eggs, buttermilk,
baking soda and vanilla. Add to
saucepan and mix until smooth. Pour
into greased 9”x13” pan 20-25
minutes. Frost while cake is still
warm.
Frosting
½ cup margarine (you never need this much)
4 Tbsp cocoa
6 Tbsp milk
1 lb powdered sugar
1 tsp vanilla
In saucepan, mix together
margarine, cocoa, and milk, and
bring to a boil. Add sugar and
vanilla, mixing until smooth. Pour
over warm cake. Sprinkle with nuts, if you like.

This is super easy and never sickening. I have the recipe memorized, it's that easy!

Coffee Chocolate Cake
3 c flour
2 c sugar
1/2 c cocoa
2 t baking soda
2/3 c veg oil
2 T vinegar
2 t vanilla
1 c cold milk
1 c coffee (can be made from instant or just whatever is in the coffee pot!)
Mix. Bake at 350 for 30-35 min.

I have a gas oven, and I'm at elevation, so I actually bake it at 325. But you get the idea.
