First Birthday Cake recipes

Hi all,

My DD is almost 1 years old already. I know, I am so sad right now. Anyway, I'm looking for a recipe to make her first birthday cake that's a lot more healthy than those store bought ones full of sugar. Anyone have any ideas?

I made a vegan cake from joy of cooking, called the ultra orange cake I think, because my son is allergic to dairy and it was delicious, no one even knew it was vegan. It certainly wasn't ultra healthy but much better than store bought for sure and it was very easy to make. I could get you the recipe if you like.I had also thought about making a carrot cake before I found out about his allergies, that could be pretty healthy.

My DD was also dairy and soy free, so I made a pumpkin cake recipe (but actually made muffins) with Whole Wheat flour and honey as a sweetener. The icing that is supposed to go with it is cream cheese sweetened with maple syrup, but I made a meringue type icing sweetened with honey instead. I will post the recipe if that sounds interesting (her b-day was in the fall so maybe the pumpkin is more appealing then lol).

I've also heard of doing carrot cake or banana muffins (using a banana bread recipe).

Thanks for all the ideas. I will look into the carrot cake or banana muffins but if I could get the recipes for the orange cake and pumpkin cake I would like to see how those are too. I like pumking pie, is the taste similar?

My son's turning 1 next week and I'm making him applesauce cake with cream cheese icing. Here's the recipe I'm using (it's j9_shooter9's recipe):

INGREDIENTS
1/2 cup butter
1 cup white sugar
1 cup chilled applesauce
2 cups all-purpose flour (1 used 1/2 whole wheat)
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped walnuts (optional)
DIRECTIONS
Cream butter or margarine with sugar. Add applesauce; beat well. Stir in flour, soda, and spices. Add nuts and raisins.
Pour the batter into a greased and floured 8 inch square pan. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until done. Serve warm

If you like pumpkin pie, you would probably like this. The flavors are similar, just not as intense. I left out the nuts for DD and as I said I made it into muffins. The original recipe was for part whole wheat and part while flour, but it worked just fine with all whole wheat. I added the wheat gluten to help it rise with the all whole wheat flour (the first time I made it without they didn't rise as much).



Oh and on your DD turning one! I was teary for the whole week leading up to my DDs birthday, so I understand

Pumpkin Cake
Adapted from The Moosewood Restaurant Kitchen Garden By David Kirsch

Cake
1 c honey
4 eggs
1 cup mild vegetable oil
2 c cooked mashed pumpkin or winter squash
2 c unbleached whole wheat pastry flour (or half WW and half WW pastry)
1-2 TBS wheat gluten
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2tsp ground cinnamon
tsp ground nutmeg
1 c chopped walnuts

Frosting
8 ounces softened cream cheese
c maple syrup

Yields 3 9-inch layers

Preheat oven to 325F. Lightly oil 3-9 inch cake pans.

Cream the honey, eggs, oil, and pumpkin or squash. In a separate bowl, sift together the dry ingredients and then add to the wet mixture, stirring until smooth. Fold in the nuts. Pour the batter into the prepared cake pans. Bake for 25-30 minutes, or until the cake is done. Cool the layers on a rack.

Whip the softened cream cheese with the maple syrup until light and fluffy. When the cake has cooled, spread the frosting between the layers and on the top and sides.

I made this carrot cake for dd's birthday, but omitted the raisins and nuts. Everyone loved it, even my MIL who doesn't like carrot cake. I just told her it was a pineapple spice cake

INGREDIENTS
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon allspice
4 eggs
2 cups white sugar
2 teaspoons vanilla extract
1 1/4 cups vegetable oil
2 cups grated carrots
1 (20 ounce) can crushed pineapple, drained
1/2 cup sweetened flaked coconut
1 cup chopped walnuts
1 cup raisins
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Coat a 10x15x2 inch baking dish or 10 inch Bundt pan with cooking spray.
In a medium bowl, stir together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside. In a separate larger bowl, mix together the eggs, sugar and vanilla by hand. Stir in the oil; the mixture should resemble pudding. Gradually stir in the dry ingredients, then fold in the carrots, pineapple coconut, walnuts and raisins. Pour the batter into the prepared pan, and spread evenly.
Bake for 55 to 60 minutes in the preheated oven, or until a small knife inserted into the cake comes out clean.

I have a recipe for yam brownies that is really yummy. The recipe says they are brownies but they turned out more cake-like IMO. It's what I think I am going to make DS for his first birthday. They taste delicious!

I was just thinking about this last night because my mom wants to come for DS first birthday and she was all "well, of course you have to let him dive into a cake!"... I was alll "Sugar much, mom??".....so I'm going to save these reciepes as a good comprimise!
