side dish ideas

I'm really doing good on "scratch cooking" I don't buy bread anymore (maybe an ER loaf here and there" The only thing I'm having an issue with now is side dishes like rice/pasta side dishes. I can't seem to get away from rice a roni and noodle roni. My husband is sick of white rice. What are some of your recipes????

I double the spinach and eat warm (instead of room temp like it suggests) for a WONDERFUL spinach bake!

One of our fave is fingerling potatoes cut in half and drizzled with olive oil. Put rosemary and thyme on them, salt and pepper to taste and bake at 375 for about 25-30 min or until fork tender. They are so good and the smell is amazing.

We also do green beans,garlic and butter and sautee until al-dente.

This recipe is for couscous. My kids love it! Roasted Corn and Garlic Couscous

I've posted this recipe so many times on here, but I just love it! I'm not sure if you use canned tomatoes or not, but this recipe calls for one. Spanish Rice

Have you ever made a risotto? I first made one using a 20 minute recipe from a Betty Crocker cookbook. I don't use a recipe any more, but even my DH (who hates rice BTW) really liked it. We usually add veggies and a little more cheese to eat it as a main dish, but it would also be great as a side dish.

The recipe below is very simple. It says to use chicken bouillon, but you can just use some broth or stock instead of water and bouillon.

You can make yellow rice in a similar method.
4 Tbs butter (or olive oil)
1 onion minced
1 1/2 c rice
2 cup chicken broth (1 can if using canned)
1/2 c water
1/2 tsp turmeric

Melt the butter in a sauce pan. Add onion and cook about 2 minutes. Add rice and cook until it starts to turn translucent. Add broth, water and turmeric, stir until dissolved. Cover and cook 15-20 minutes until rice is done.

You can make it into a pilaf by adding a chopped tomato when you add the broth. Then add 2 Tbs lemon juice and 1 1/2 Tbs dried parsley (or 1/2 c fresh).

Another cheap potato side is just cube the potatoes and toss with olive oil and some seasonings (we like a little garlic salt and dill) and bake at 400 for 30-45 min until they get tender. YUM!
