Breakfast casserole help!!!PLEASE

Hi Mamas! My dd's teacher has requested that I bring in a breakfast casserole for their Christmas party at school. I do not have a breakfast casserole recipe
This is for a kindergarten class (considering there will be doughnuts and other such goodies at this party, I really do not think these kiddos will be eating breakfast casserole, but if this is what she wants.......)
Any easy and yummy recipes?

A little background: I am a terrible cook Simple recipes are best for me

I know there are a few threads on this but here is one I started last fall. There are some good recipes on it.
Our favorite is in post 4. I've done this one so many times and it is so good. My boys love it. I've made it with sausage, bacon, even roasted peppers (my favorite one). The only thing I changed was I used more hash browns in my pan. Enough to cover the bottom of my pan. For me it works out to 7 1/2 of the rectangle hash browns.

dice some bread and put it in the bottom of a greased 9x13 pan
add any bacon or sausage or cheese, cut up of course, and just sprinkled throughout
whip a dozen eggs with 1/2 cup milk and pour over the bread mixture
you can add more cheese on top

cook at 400 for about 30-35 minutes

My kids eat this all the time - you can put salsa or veggies in it, mushrooms and ham and swiss is great - but since this is for Kindergarteners, I would just stick with the traditional stuff

You can use tater tots at the bottom instead of bread. I put like 2 tbs of olive oil over the tater tots. sprinkle mostly cooked bacon adn then crack 6-8 whole eggs over the top of it all. cover with cheese (singles or shredded) Cook at 325 till the eggs are done. It's yummy! I serve w/ketchup.
