Need help with a potato idea for xmas roast

So my husband has decided we are doing Prime Rib for his mom and grandparents for xmas eve- fine. On the menu are the beef, yorkshire pudding and some stovetop veggie - broccoli or the like.

My need for help comes with the potato. I dont like potato casseroles, like scalloped, and the oven will be occupied with the yorkshire while the roast rests, so I can't do baked potatoes which is what I really want to do - or can I?

I like the idea of serving potatoes in their jackets - I'm thinking of making salt potatoes for xmas! yikes! Any ideas? Can you bake potatoes many hours in advance? TIA for any advice.

my parents always boil large potato wedges and then once they are done they put them in with the roast to get all brown and crisp on the outside (not to mention make them taste like roast). They are my all time favorite!

It's a good idea...I was hoping to avoid boiling potatoes, but this is a good last resort!

It's delicious, but traditionally more of a summertime type dish for bbq and outdoor events.

I don't know where I got that phrase from.. "jackets." But yes I mean unpeeled.

I'd recommend horseradish mashed potatoes... they are really easy and compliment prime rib really well. Boil your potatoes then drain (you can toss 'em in a pan and heat them to get them really dry if you want), mash till no lumps remain and then stir in a dollop of yogurt, a couple spoonfulls of horseradish, and a dash of salt... then slowly add some milk, just a little at atime so you get a nice creamy consistency. YOu can add more or less horseradish depending on how strong you like the flavour. Top them off with a sprinkling of chopped fresh parsely. I realize this is not an "in the jacket" recipe (cute phrase btw!) but I thought I'd throw it in there for your consideration

What about twice baked potatoes? You could start potatoes early prep while roast is in and maybe slip them around the other oven things just to heat through again.
