I always 'bake' my potatoes in the microwave

Wash and pierce with a fork, cover with a wet paper towel and cook 10 minutes. Flip and re-wet the paper towel and another 10 minutes. VOILA! Baked potatoes!

You could make ranch mash potato's.
potatos cubed, unpeeled
1 packet of ranch seasoning
butter
milk

Boil potatos until tender, mash with butter and milk and seasoning.
