We are trying to eat better (NO eating out) which is hard with DH's work schedule but I am going to do it!
I am looking for kid friendly, budget friendly, healthy recipes. Breakfast Lunch Dinner or snacks. SPAM ME! lol I dont cook and Im learning so I need them to be fairly easy until I get good lol. My DH usually does all the cooking b/c he likes to but like I mentioned with his work schedule we have been eating out too much. HELP!

A roast in the crock pot is about as easy as it gets.

I peel potatoes and put them in the bottom with carrots and onions. I dump onion soup mix over the roast and put on top and add about a cup of water. Cook on low for 8-10 hours.

I cook chicken or pork in the crock pot for a day with just water and then take it out. I put the meat in the crock pot the next day with bbq sauce and shred the meat with my fingers or two forks. I butter and garlic some buns, slap the shredded meat on them, add a piece of cheese and there ya go. I actually add a fresh or frozen veggie on the side too, easy peasy.

We do shredded chicken tacos too. Cook and shred the chicken then simmer the chicken in salsa and a taco seasoning packet. Put the chicken in taco shells, add cheese, lettuce, tomato, sour cream and black beans on the side.

Another favorite is baked potato's with all the fixing's.

We also do "potluck" night once in awhile so everyone gets to pick something easy and make it themselves and eat when it fits their schedule. We do this on PTA or Scouts nights so I don't feel pressured to get a meal on the table for everyone on a tight timeline.

How about stuffed shells and meatballs in the crockpot? Or make some soup- perfect for this time of year, but very budget friendly. After I make a pot roast, I sometimes just cut up the leftovers, add some frozen veggies, can of tomatoes, some cabbage (the key thing for me with vegetable soup) and some broth and cook until veggies are tender.

One of our favorite quick, healthy and cheaper meals is fish (talapia is very budget friendly). I make a foil packet with the fish, sprinkled with sea salt and ground pepper with sliced lemon on the top. Bake at 400 for about 10 minutes (depends on the thickness). Add some rice pilaf and some steamed veggies (we typically do zucchini/squash or broccoli and carrots). Your meal is prepared and ready in about 20 minutes.

easy/yummy -- chicken drumsticks -- I buy a tray of little drumsticks, coat them in Kosher salt, and bake on high (about 475 degrees F) for abotu 20 mintues per side. they come out with crispy skin that way.

I have a lot of recipes on my blog. (The link is in my signature below.) I have a lot of easy, quick recipes as we're a family of 6. Time is crucial at my house! If you would prefer suggestions, let me know.
