6 lbs of sweet potatoes

and I need a recipe. Has anyone ever made soup with them?

Sweet potato casserole w/ the nuts and sugar on top is delicious, but we've had that a bunch of times lately....

My MIL loves sweet potato fries. Personally I just like baked sweet potato with butter and brown sugar.

I was going to suggest fries too. But typically around our house we chop them steam them and freeze them. We like them as a side dish with butter. But ds likes to have them for snacks. Hence the freezing...so we can grab only a couple ounces and reheat them in the microwave.

this is random, but if you like oatmeal, it's really good stirred in. I keep some pureed butternut squash or sweet potato in the freezer in small "plops" and sometimes stir one or two in to my oatmeal, especially if it's too hot to eat -- that will cool it right down -- and if you add cinnamon and vanilla it tastes like pumpkin pie! (kind of, lol).

I was going to say fries as well, they are supposed to be really yummy.

I just bake them like regular baked potatoes

If you aren't vegetarian, pork and sweet potato stew is very very good! I put all kinds of things in it - black beans, corn, tomatoes. PM me if you want a recipe...

I like to make curried lentils with Sweet potatoes and Spinach (if you don't like spinach you can leave it out). Be warned-this is like most indian dishes doesn't look so good but tastes great.

Curried Lentils and Sweet Pototoes
1TBS Olive oil
1 cup chopped onion
2 large garlic cloves, minced
1 TBS Curry powder
1 TBS minced fresh ginger
1 tsp ground cumin
1 cup lentils, rinsed
2 1/2 cups vegetable broth
2 medium sweet potatoes (peeled and cut into 1/4" cubes)
4 cups baby spinach leaves
1 cup plain yogurt (optional)
1/2 cup chopped raw almonds (optional)

Heat olive oil in a medium pot, add onion and garlic and saute until soft (about 5 minutes), Stir in curry powder, ginger and cumin cook for 1 minute. Stir in lentils and broth, bring to boil, reduce heat and simmer covered for 10 minutes. Add sweet potatoes, cover and cook 10 minutes longer or until sweet potatoes are just tender. Stir in baby spinach and cook for 1 minute longer or until spinach is wilted. Add salt to taste.
Transfer to four serving bowls and top each with 1/4 cup yogurt and 2 TBS of chopped almonds.

I'll have to try that. Sounds yummy. I may try it in some cream of wheat too.

I forgot~I went to a get together recently where someone used grated Sweet Potato in her tossed salad. It was good!
