Saving oil

I've been saving and reusing frying oil (canola) for a few months now, and I'm wondering if that's really safe. I usually fry up corn tortillas for tacos once a month or so. Then I drain what's left into a jar and keep it in the fridge, and pull it out again the next month. Could it go rancid or grow things we don't want to eat?

We do this, too. We set a disposable cone coffee filter in a funnel to filter the oil. I think it's fine because oil doesn't have to be refrigerated, and I've never had an issue with rancid cooking oil.

When we had a deep fryer as a kid, my mom didn't empty it hardly. It sat full in the cabinet until the next use We never got sick (from that anyhow).

As long as you filter out all the floaties and stuff and keep it covered to help it from going rancid you will be fine! We reuse our frying oil and keep the same batch goin' for a long time. Eventually the oil will get dark and we just toss it and start a new batch...But, there is just no need to use new oil each time!

Oh wow! I wish I knew this years ago. I buy oil constantly and throw it away each timeI will definitely save it from now on. I was always afraid of the rancid thing

I just filter it through a paper towl and use it about 3 -4 times.
