can I replace store sour cream with naturally soured raw milk/cream?

what do you think? how do they make sour cream? we use raw milk and I have some that is soured... trying to make stroganoff tomorrow.

The only issue I can see is that most commercial sour cream is significantly thicker than soured raw milk (unless you've strained quite a bit of the whey off). I think the taste will work for the stronganoff, it's just the consistency I would worry about.

I wasn't thinking of milk that's all the way to curds/whey, just soured so the cream I could skim off the top would be soured as well...
