Soup Recipes
What are your favorite soups to make- preferably hot ones (I have had cold toes for the past week due these MN temperatures)
Tonight we are having Chicken Dumpling- got the chicken on sale and had it for dinner last night and cooked the broth. So now to make the Dumplings! I am using the Mark Bittman recipe: 6 Cups Chicken stock 4 T. softened butter 2 eggs 1/2 c flour 1/4 c minced parsley leaves (I will substitute something) 1/4 c minced onion salt and fresh ground pepper Basically you beat the egg into butter you have creamed with a fork, then add the rest. Then the recipe says to add heated stock until batter is just soft. Then to make the dumplings you just drop them in the hot stock and cook about 10 minutes. Yummm... my grandmother used to make wonderful chicken dumpling soup. Anyone else have a tasty recipe to share? I just bought some split peas so will be making ham and split pea soup soon with leftover frozen ham, but for that one, I basically just throw things in the crockpot.

Creamy Wild Rice Soup (serves 6)
1 box of wild rice mix (Rice a Roni or similar) 1 cup shredded carrot 6 TBl butter 1/3 cup flour 4 cups of chicken broth about 1-2 cups of cooked meat, chopped or shredded (we’ve used chicken, turkey, and ham – whatever is leftover from the night before usually) ¼ tsp pepper 1 cup of half and half 1. Make rice according to directions 2. While rice is cooking, melt butter in large pot and sauté carrots for 1-2 minutes. Stir in flour until blended. Gradually add broth 3. Bring to a boil, cook and stir 2-3 minutes, until thickened 4. Add meat, pepper and wild rice. Cover and simmer 5 minutes. 5. Reduce heat, add in cream and heat through. Serve. Taco Soup (serves 6) 1 lb ground beef 1/2 onion, chopped 1/4 cup taco seasoning (or one packet) 1 15oz can diced tomatoes 1 8oz can tomato sauce 1 can pinto beans, drained 1 tsp cumin cheese, tortilla chips, and sour cream for garnishing Brown hamburger with onion, add taco seasoning and 1/4 cup water and simmer Pour in tomatoes with juice, beans and tom sauce Add 1 and 1/4 cups water and cumin and simmer until done garnish with cheese, sour cream and tortilla chips and serve |
