Roast asparagus in the oven with some olive oil, a squeeze of lemon juice, and chopped walnuts or pecans. Salt & pepper. Yum! This was my DD1's favorite when she was younger... now she won't even touch asparagus cooked anyway at all.

I make a recipe called Chicken Divan. It is cooked chicken and steamed broccoli in a curry sauce (a can of mushroom soup, 1 cp mayo, and as much curry as you like). Layer chicken, broccoli, and sauce. Top with grated cheese and bake at 350 until bubbly (about 30 minutes). Its great for leftover chicken and my DD (13 mths) LOVES it!

ETA: If I dont have broccoli I have used cauliflower or brussel sprouts or a mixture. Its all very tasty!

Thanks for the ideas! We love roasted veggies here! I am going to try some of your ideas in the coming weeks. I like the broccoli w/parmesan cheese!

Cheese makes everything better. lol

I steam my broccoli and then add grated cheddar cheese. My kids love that.

My four year old loves asparagus. My seven year old, not so much. I roast it. Put on cookie sheet, drizzle with olive oil, sprinkle with parm cheese and sea salt. Roast for 10 minutes at 500

I did make roasted asparagus the other night and it was so yummy! I never thought of adding parm cheese. I just use olive oil and sea salt. I will have to try that with parm cheese, thanks!

No problem. I love it this way. It almost tastes like a salty snack. Especially since the ends get all crispy like a chip!!

Our family favorite is Garden Ranch Pizza. Start with a basic pizza dough rolled out. Add 2 cloves of minced garlic to ranch dressing and spread over dough, that will be your sauce. Top with mozzarella and parmesan cheeses and use chopped veggies as your toppings: broccoli, sliced carrot, onions, peppers - even leftover diced chicken. Bake until dough is cooked and cheese is bubbly. Mmmmm!
