anyone else have good meals to freeze? so far ive only froze two meals, i have
5 single servings (in separate tuberwares) of sausage potato casserole, 4 little tubs that are meal size each has 1 breaded pork chop, veggies and pasta side and scalloped potato side and tomorrow night im doing enchiladas with a side of mexican rice, all the meals im making im freezing in portion size so hubby and i dont have to agree on a meal we can each just grab and go as we need

This was a life saver for me the first time around, so I made it a priority this time around too... we have 39 meals in our freezer ready to thaw/heat/eat! I posted some of the recipes on my blog... www.clarkbaby.blogspot.com if you scroll down to some posts from earlier in january you'll find more details. If there is anything someone wants a recipe for that I didn't get around to posting there yet, send me a pm. Not sure I'll get back to this thread...
We freeze our meals like sloppy joe and hamburg stuff in gallon ziplock bags laid flat to freeze. Casseroles go into foil pans, covered with foil, stuck in a 1 gal ziplock with a sticky note with detailed insturctions so even hubby can "make" dinner if I'm busy. Soups go into tupperware tubs. What I didn't get to yet is the quickbreads... crandberry, pumpkin, banana... maybe this week! I like to be able to pull one of those to go along with a meal - or for a quick (healthy) snack. Edit: Here's what's in our freezer... 3 meals of stuffed peppers 2 lasagnas 1 stuffed shells 2 cheeseburger soups 3 cabbage kielbasa soups 5 mushroom turkey tetrazzini's 2 meat loafs 3 sloppy joes 1 turkey/gravy 1 turkey/mashed potatoes/gravy 1 Chunky Tomato Pasta Bake 2 batches Chicken-n-bisquits (minus the bisquits) 4 Chicken and Rice Casseroles 2 Italian Chicken Spaghetti 1 Chicken Paprikash 2 Apple Onion Chicken 1 Ziti (my sister made) 1 Italian Wedding Soup (my sister made) 1 Ruben Soup (mom made) 1 stroganoff soup (mom made)

It's also easy to just make double batches of meals- one for tonight and one to freeze. Very simple way to fill up the freezer with meals!

Here is how im doing mine, all in meal size so we dont have to eat the same things for dinner OR eat at the same time!
i have 5 of these (sausage potato casserole) ![]() i have 3 of these (breaded pork chop, pasta w/veggies, scalloped potatos) ![]() then 2 of these (2 enchiladas, mexi rice and one has refried beans) ![]() i am considering doing this all the time and just freezing like one serving size of each meal i make just because we end up wasting so much when we are sick of the left overs and it would be so nice to be able to pick something homemade and easy for lunch when i have 3 kiddos and hubby is at work

Don't forget about simple, already frozen things that you can buy at the store... frozen fruits and frozen vegetables! Easy side dishes, snacks, for smoothies, etc... And raw fruits and veggies are such a pain to freeze or can! Frozen 'stir fry' or 'mixed veggies' can be super easy to throw in with scrambled eggs (especially if you've already frozen them, haha) for omlets, or scrambles!

And one thing I really need to focus on this time is LUNCHES. Easy, fast, healthy lunch ideas. I seem to always have enough frozen for dinner, but for lunch? Never!

I have one casserole in the freezer. My mom will help cook and my dh will do easy stuff while he's home. I only have 2 weeks til my due date, but this week I hope to at least get some meatballs frozen.

Yup, i've got a few meals in my freezer waiting to be taken over to my mom's deep freeze
Basically i'm making a lot of double batches but i do have plans to have a few cooking days

I mentioned meal freezing to DH and he was like "

He has a strong aversion to processed and frozen foods (which can be annoying sometimes since I can't even make RICE out of a packet, it has to be made from scratch ) but I guess in this instance it works to my advantage. DH is a great cook, but usually too lazy to cook dinner. All the meal ideas sound great though. I might do frozen enchiladas anyway just because I them.
