We love Swedish Meatballs over rice and Chili over rice. You can also make porcupine meatballs which include rice. Stuffed peppers or cabbage would also have rice and ground meat. Rice pudding is very tasty, and with brown rice, you could think about including some dried fruits to make it even more fun.

Funny you should ask--I had rice and seasoned ground beef last night!
This sounds simple, but it's delicious: Prepare rice as usual. Crumble and brown the beef, sprinkling liberally with a peppery steak seasoning and garlic. I should come out tasting sort of like breakfast sausage. Drain the hamburger. Add a serving of rice, a serving of beef, and a sprinkling of feta cheese to each dinner bowl. Mix well. The feta makes it just salty enough. I could eat this every night

We love rice here...and just to be stereotypical, we are Asian. We usually eat white rice though, but I have started using more brown rice. It is more filling and healthier.
You should look up Asian recipes, like stir fries. That is great to eat with rice. You can also make fried rice or just cook some chicken wings and eat it with the rice. Instead of eating your dinners with a side of pasta or bread, eat it with rice instead. We eat rice with everything, pretty much...fried eggs, hot dogs, pork chops...you get the idea.

like the above, typical asian family here where rice is always on the menu. we pretty much eat rice with meat, if there's meat, there is rice.
how about curry rice? stew over rice?

last night we had homemade Indian Curry with rice... the other night we had jambalaya (
), tonight is leftover curry but tomorrow is chili over rice.. (we too have tons of rice)

We eat rice with everything, too. Even things that most people would serve with potatoes because we just don't like potatoes all that much. A favorite breakfast around here is a bowl of rice with a fried egg, shredded nori, bonito fish flakes (dried, shaved fish that's a Japanese relative to tuna), and sesame seeds on top and sprinkled with soy sauce. And we're not even Asian!! But based on what you said, I wouldn't expect your SO to go for that, so instead I have a fun recipe for you if you have leftover plain cooked rice... cookies!! oh yeah! and what a nice change from oatmeal cookies! Enjoy!!
Brown Rice Cookies: o 2 cups cooked Brown Rice (short grain or long grain) o 1 1/2 teaspoons baking powder o 1/2 cup butter or margarine o 3/4 cup coconut o 3/4 cup sugar o 2 teaspoons cinnamon o 1 egg, beaten o 1 Tablespoon sugar o 1 teaspoon vanilla o 1 cup pecans or walnuts, finely chopped o 1 cup sifted flour Cream together butter and sugar. Add beaten egg, vanilla, mix well. Add sifted dry ingredients. Fold in cooked rice and coconut. In another bowl, mix together 1 tablespoon sugar, cinnamon and nut meats. Drop cookie dough by teaspoons on ungreased cookie sheet. Sprinkle top of each cookie with cinnamon-nut mixture. Bake in 350 oven for 20 to 25 minutes or until cookies are a golden brown in color. Makes 2 dozen. |

So have to try that cookie recipe.
Dirty rice is a great rice/ground meat combo. Basically it's cooked rice, ground meat, onions, peppers and some mexi seasoning. Alton Brown also has a great baked brown rice recipe that I make into a pilaf by toasting the rice with some onion & carrot in butter/EVOO before baking. |
