If you make chicken soup from scratch
How do you get it to be that nice yellow color?
Every time I make soup from complete scratch it comes out to be more green than yellow. The flavor is great, it's just that the color is different. The only way I can get it to be nice and yellow is if I buy the mix from the store and The Hubby wont eat soup if its not yellow.

Re: If you make chicken soup from scratch
I really don't know how they get it to look so yellow, either. One drop of yellow food coloring would do the trick though

Re: If you make chicken soup from scratch
If you leave the skins on the onions, it helps
Adding carrots too. But honestly, the color in store bought soup is not real

Hmmm, I don't know how I get mine to be yellow. It just turns out that way.

Re: If you make chicken soup from scratch
I let the chicken brown for a bit after the onions have softened and just scrape up the browned bits (usually gives it pretty good color) if it needs a bit more of a kick I add a little bit of soy sauce to it.

Re: If you make chicken soup from scratch
Mine is yellow because I brown the onion before I throw it in.

Re: If you make chicken soup from scratch
I use lots of carrots. I guess my fault lies in the onions. We don't really use yellow onions only red ones (growing up it seemed as only "weird" people and those that didn't know how to cook used yellow ones. I guess I still carry that stereotype as I always reach for red onions and feel kind of weird using yellow ones
.)
