i just put the chicken carrot celery onions and water in the pressure cooker and it turns yellow. its not a very bold yellow like store bought but it is yellow-ish

I make my broth separate. So if I have a roasted chicken then I will boil the chicken and bones with a yellow onion, celery and carrots the next day. Strain and freeze. I sometimes add bouillion for more favor if I've had a lemon/pepper chicken or something like that. It still isn't a bold yellow like the store stuff but a yellowy-brown. I will debone chicken bits and sometimes throw those in with the broth. But that's only if I know it will be used with the pieces of chicken.

Then when it's chicken soup time I add some frozen pre-cooked chicken leftovers, carrots, celery, and broth. Cook until carrots are almost done and add my noodles. Sometimes my noodles are homemade (egg and flour ones) sometimes they are just cheap egg noodles from the store.

Onions and carrots and others said. Onion peel can make it yellower but i find it doesn't need it.
If you add some tumeric, it gets a great deep yellow color.
