breakfast muffins?
I am in search of a couple breakfast muffins. I have one recipe but need to branch out. I like to add flax seed meal and at least 1/2-3/4 cup veggie puree (spinach mostly) to the batter. Oh, I also add a handful of chocolate chips. If I do this, my ods gobbles the muffins up.
Any tried and true and toddler/preschooler approved muffins?

my kiddos love pumpkin muffins... I also found a base recipe and you add your own add-ins = it was pretty good, but I don't remember where I got it from... probably www.tastykitchen.com
I'm sure if you google basic muffin recipes you'll be able to find a bunch! |

I like the recipe in Joy of Cooking for Sour Cream muffins. Instead of the 1c liquid in the recipe I use 1/3c applesauce, 1/3c plain yogurt, 1/3c sour cream, and I cut down the sugar to 1/2c and add 2/3c soaked dried apples and about 1T of apple pie spice. Appley and cinnamon-ey and delicious!

Thanks for the replies! I am looking at Tasty Kitchen site right now and seeing some good stuff! The Sour Cream muffins sound yummy too! I like that you change the ingredients a bit like I like to do. I will have to try those maybe tonight! I have everything you listed. Off to google the recipe!
ETA: I have a Pumpkin muffin recipe from Joy of Cooking that is to die for! I just might have to make those although they aren't as healthy as I am looking for.

I like to add different flours -- oat, quinoa, and rice. I usually just take a basic recipe and add stuff. I made some delicious raspberry and lemon mufffins once, I'm not sure where I put the recipe but I'm going to have to find it now because I want some.
I have two editions of The Joy of Cooking. Some recipes are updated in the newer version that may be lighter. Or, you can do a bit of research on how to lighten a recipe. Butter can usually be cut significantly right off the bat, and milk can be lighter. I use fruit puree in place of oil when possible (it's not just apple that works). You could also work sort of backwards and look up vegan recipes and add back in things you want. |

I got this one on cooks.com and it is yummy!
APPLESAUCE OATMEAL MUFFINS 1 1/2 c. quick oatmeal 1 1/4 c. flour 3/4 tsp. cinnamon 1 tsp. baking powder 1 tsp. baking soda 1 c. unsweetened applesauce 1/2 c. skim milk 1/2 c. brown sugar 3 tbsp. veg. oil 1 egg white Mix together in order given. Top with the following: 1/4 c. oatmeal 1 tbsp. brown sugar 1/8 tsp. cinnamon 1 tbsp. melted butter Bake in a preheated 375F oven for about 15 minutes, or until done (depends upon the size of the muffins). |

Check out the skinny girl books by Bethenny Frankel. She's got some yummy blueberry ones and only a few ingredients which is my fav!
