Cooking Turkey

I have a turkey that has been a stand-up freezer for about a year that I'd like to cook to put in other dishes (we don't care for the traditional "holiday turkey"). Can I just defrost it and stick it in my stock pot for like 12 hours and separate the meat out for meals and save the stock?
