Eggplant anyone?

How do you cook it? Do you have to salt it as I've heard?I looked it up and one website says yes to salt another says only salt the big ones but whats big and whats small? I have a smaller sized purple eggplant and I'd like to cut it up and use it as an alternative to meat in my marinara sauce for mostaccoli. Anyone know how to cook him up? TIA

I cube it and put it in my spaghetti sauce or pan fry with zucchinni in oliveoil with garlic and onion Yummy!

I egg batter and bread crumb mine then fry it or broil it and eat it as is

I love to slice it up, dip it in egg and seasoned flour or breadcrumbs and fry it in olive oil. You can top it with sauce or eat it plain....yummmmmmmmmm

I attempted eggplant once (I've been odering it at restaurants for years and I was always intimidated) and it turned out horrible. The recipe was from allrecipes.com, and it had rave reviews, but the eggplant tasted like it was rotten (looked fine). I don't know where I went wrong, but I've gone back to only ordering at restaurants .

oooh, in the summer we split an eggplant as the entree. Half the eggplant, salt, pepper, etc., etc. Grill it until tender, then cover w/ sauteed tomatoes & sliced mozzarella...delish & super easy. Too bad there's no grilling in CNY in the winter.

I slice or cube it up and soak it in salt water for a little while, then drain and rinse and cook however I want it. I like to slice it, drizzle with olive oil and sprinkle with whatever seasonings I want and broil in the oven for a few minutes. YUMMY!

I slice it lengthwise into strips, salt it, let it stand for a while and blot off the excess moisture (this helps prevent it from being mushy).

Then I brush it with olive oil, salt it, and either grill or broil it. LOVE it this way - the flavor and texture are so good!

Once it is cooked this way it can be added to pasta dishes or made into 'roll ups' (sort of like lasagna but without noodles), etc.

Same here!~ It's also good dipped in soymilk, then whole wheat flour to make it yummy and crispy.... Now I want eggplant

Oh yeah ! Soooo delicious . I'm officially an eggplant addict . Sometimes I had parmersan to the breadcrumbs ! Yum !
