Veggies on hand?

What veggies do you keep on hand and what do you do with them?
I always have these great plans to make veggies then can never think of anything so the veggie drawer goes bad and I pull out my frozen stuff to steam...HELP me be a better cook!

I ALWAYS have carrots and tomatoes on hand, lettuce and spinach typically, almost always red peppers, usually some kind of squash (winter right now, obviously)... But other than that, I like to mix it up with veggies so I buy a large variety. We had asparagus, cauliflower, and broccoli recently, right now we have beets, sometimes I get cabbage. I usually just get what's on sale. We love veggies here! We oven roast or steam usually.

I always have onions, zuchinni, carrots, peppers and celery. If all else fails they get chopped and go into spaghetti sauce, soup in the crockpot or skewered dressing poured on and roasted in the oven. Other veggies I buy alot of the time goto waste so I stick to these.

I keep onions, potatos, carrots and celery on hand at ALL times. They are my sure-fire back up if I get a cook's brain-fart. I either use them in a beef roast/crock pot ordeal, or boil some chicken and make a soup. We usually eat this 2-3 times in a grocery shopping cycle. I also really like to have asparagus on hand (I'm the only one who will eat it, but I can steam a bunch and eat it in one sitting!), and green or red peppers, but lately, the PG heartburn has put a damper on peppers of any kind. Oh, and there is always a squash or two.

When I started doing what you are trying to do, I would get 3 fresh fruits and 3 fresh veggies EVERY week at the supermarket. Then I would leave them out on the counter and planned the meals around them. Now its second nature, I buy whats on sale or local and my staples change with the seasons.

I typically like to have these when they are in season: baby carrots, broccoli, tomato, avocado, grapes, apples, melon, potato, onion, celery.

Fresh - We always have lettuce and spinach... then we usually just buy whatever is on sale at the store.

Most of the time we roast our veggies in the oven with some olive oil and herbs. Works really well with zucchini, yellow squash, eggplant, and asparagus.

And in the freezer we always have bell peppers, corn, and mixed veggies.

as far as fresh veggies in the winter time I tend to only keep onions, mushrooms, green peppers, carrots and lettuce and some root veggies. I will saute or roast them. Add them to casserols or pasta. I also use alot of frozen veggies in winter and just steam them.
