Made the BBQ Cups w/corn...and I used homemade biscuits b/c I didn't have any canned.....DELICIOUS!

YOU'LL NEED:
Big box elbow macaroni
ketchup
chili powder
salt/pepper

Measure out however much macaroni you need, cook/drain. Then add alot of ketchup to it w/some chili powder, salt/pepper then stir and cook until boiling. Turn off & enjoy! Add as much chili powder as you want, according to how spicy ya like it

I was trying to throw something together tonight, wanted soup since it's rainy and cool today! It turned out so good, I thought I'd share it here.

Easy Minestrone

4 Carrots, sliced
4 Celery stalks, sliced
onion and garlic (I used dried minced onion and jarred garlic)
1 can or jar spaghetti sauce
2.5ish spaghetti sauce cans of water
1 can Kidney Beans
1 C. dry rice
beef boullion

I cooked the carrots, celery and garlic in a bit of oil in a large stockpot until they were almost soft, then dumped in the spaghetti sauce and water, 2 TBS. Beef boullion, a sprinkle of dried minced onion, the dry rice, and the beans. Simmered for about 30ish minutes.

I only wish I had made some bread today to go with!

My Creation

Ingrediants:
~2 peices chicken, diced up
~1 can cream of celery
~1 cup rice
~biscuits (i made my own baking powder ones)

Cook chicken until done & rice (seperate) then turn off heat and dump can of cream of celery mixed w/1 can water into pot. Stir then toss it all in cassarole dish. Next, layer biscuits on top on cassarole and put in the oven on 350. Cook about 20min.

Cream Corn Cassarole
1 can cream style corn
1 egg, beaten
1 or 2 tbsp. milk
1/4 c. cornmeal
Salt
Pepper

Mix above ingredients. Pour into a casserole dish. Sprinkle bread crumbs on top. Bake at 350 degrees for 30 minutes. Test with knife, if it comes out clean it's done.

***serve w/instant potatoes and cornbread***

This one was created from things i had on hand. This was cheep for us as we had some smoked sausage in the freezer I had to use up.

Sausage Mix up

6 smoked sausages
3-4 potatoes
2-3 Carrots
1 large onion
1 bell pepper

cut the sausage into slices. Cut veggies into cubes (about 1inch). start with oil in the fry pan. Throw in the carrots, potatoes and onions. Medium for about 10 min. Put sausage and peppers on top about another 10 min. Sir. Cook until veggies are tender and browned. Its a one pot meal. Oh and salt and pepper

i actually only made it with sausage potato and carrot. It's all I had on hand. Still really good.

Chicken Packets - My hubby LOVES these! (They're in the oven right now)

2 cups cooked chicken (I just use 2 chicken breasts that I get in the big bag from Aldi's - whole bag costs $6... so 2 pieces is maybe $1.50?)
1/4 cup onion
3 ounces cream cheese softened - 8 oz is ~$1 so... this is less than 50cents
2 tablespoons milk
S+P to taste
2 containers of refrigerator crescent rolls (aldi's for ~75cents each)

Mix cooked chicken, chopped onion, cream cheese, milk and S+P together in bowl.
Open crescent rolls - they will be triangle shaped, but leave them with 2 triangles together and smoosh the perforation together so you have a total of 8 rectangles.
Spoon ~1/4 cup mixture onto each rectangle.
Close up packets by bringing all edges together.
May brush with melted butter and sprinkle with bread crumbs (I don't though).

Bake at 350degrees for ~20 minutes...
