1 can mixed vegetables (.75)
1 can black beans, rinsed (.50)
1 can of vegetable or chicken broth or 1.5 cups of homemade broth(.50)

Dump everything into pot, except black beans need to be drained. Heat thru. Ill sometimes add some garlic too. I usually serve this with PB& J's.
This is actually on the menu for this wk.
We made this recipe tonight but just doubled everything...Not one last drop was left and my husband said it was the BEST soup he has had in years...

We served it with a little sprinkle of cheese and toasted wheat bread...YUM!

Re: ~$5 Meal Ideas~

This one takes a BIG crockpot but it makes a lot of food for cheap
10-12 chicken thighs
3-4 cans pork & beans/baked beans (whatever is on sale)
3c chopped onion
2c BBQ sauce
2tsp each mustard, sugar, chili powder

Dump it all in the crock pot and cook on low all day. Before serving, shred the chicken. Serve on rolls, like a sloppy joe only messier!

Mexican Chicken
4-6 boneless chicken breasts, cubed (I actually used 3)
6 corn tortillas cut in bitesize squares (I would probably use 10)
1 4oz can green chiles, chopped
1 can cream of mushroom soup
1 can cream of chicken soup
1 small can evaporated milk(3 or 4 oz?)
3/4 lb grated cheddar cheese (I actually used 4 oz, all I had)

Mix it all up and put in in a dish. Pop it in the oven at 350 till the chicken is done. I served it over brown rice! Man I could eat the whole pan!
I made this last night and it was pretty good. We will definitely make it again. Next time, I think I will add a can of rotel as it seemed to be missing something. All in all, good and hubby ate a LOT!

Re: ~$5 Meal Ideas~

This is a fave in our house

1 lb. ground beef
Cooked rice (brown or white)
1 can of cream of mushroom soup
worchestire (sp) sauce --I just eyeball it, a few dashes to taste
Crunchy asian noodles or french's fried onions, or anything crunchy like crushed chips to top
Cook ground beef, add cooked rice, w. sauce and soup, mix well, add topping and enjoy!

Re: ~$5 Meal Ideas~

sh!t on a shingle (or the cleaner version is chipped beef of toast)
I don't know the exact amounts, becuase it's different everytime for me

Depending on family size
2-3 packages of Carl Buddig pastrami or beef (more or less depending on personal taste)
Beef broth or powdered gravy mix
cornstarch
milk or water (to thin out gravy if needed)
2-4 slices of bread per person

Make gravy mix, as thick as you like, but it should be fairly thick to stay on toast. Most often I use two cans of broth and that makes plenty for two adults and 1 child. Add bf and simmer for 10-15 minutes. Pour over toast and enjoy. If you would like more specifics let me know.

Re: ~$5 Meal Ideas~

Here's one more my family likes
Chicken salad sandwiches

Roasted chicken from the deli (costs more than $5, but I can easily get two, sometimes three meals out of one)
mayo (to personal taste)
grapes about a cup (quartered or apples or both)
1 cup total celery and onion finely chopped
salt and pepper to taste
Mix all ingredients together and serve on bruschetta or regular loaf bread.

ALL creamed soups, store bought stock/broth, worchestire sauce, soy sauce, packaged flavored rices and pastas, and several other things that aren't coming to mind right now are full of MSG. It's very bad for you, and even worse for a LO who's brain is growing so rapidly. You can make broth easily, and you can make a rue for cream sauces instead of the creamed soups. Once I started reading what was in the crap I was eating I changed the way I cook. (I also found out today that there is MSG in some vaccines! WHY!?) Anyway, that's my $0.02, I'll step off my soapbox now...

Me too, Momma. Not to mention that my daughter has a serious dairy allergy.....

I would be VERY interested in a good recipe for a roue for cream sauces....especially if it's something I can make with soy or rice milk.
