I didn't see this posted, sorry if I missed it. My family loves this meal and it is very easy. It is basically fried meat with gravy. We usually use hamburger meat, but sometimes we use steak or something different. It just depends what's on sale. Sorry if the directions aren't to specific, it is a family recipe.

Caldito

1 pound hamburger meat (about 1.50 on sale)
a couple tablespoons flour (maybe 50 cents)
a couple tablespoons oil (maybe 50 cents)
2 cups water (maybe 50 cents)
Instant mashed potatoes, or you can make your own (about 1.00)

Brown the hamburger meat. We use a cast iron pan so it leaves nice "crunchies" on the bottom.

Add oil to the pan and coat the hamburger meat. Next, add flour. Cook until the flour is browned.

Next add the water. Cook for a few minutes until the water turns to a gravy.

Serve over mashed potatoes or rice. We always serve it with a veggie and either tortillas or bread, whatever we have on hand.

The total is $4.00. If you add in the tortillas or bread and veggies it brings the total to right around $5.00. Enjoy!!

I htink I posted this in the wrong thread before. So here it is again

Here's one we had the other night and it was a hit.

Turkey Shepard's Pie
1lb Ground Turkey $2 (sale & coupon)
I bag frozen italian veggies $1.49
1/2 c chopped onion $?
leftover garlic mashed potatoes
apx 3Tbs shredded cheese
1/3c chicken stock
2tbs flour

Cook turkey, drain on paper towel
saute onion
add frzn veggies
add turkey back in and season
Add stock and flour combine really well
put ingredients in a casserole dish
cover ingredients with leftover mashed potatoes
sprinkle with cheese
cook in 350 oven for 1/2 hour

Easy Cheap and GOOD. .

A roux is very simple... just mix equal parts flour and fat (butter, oil, or fat from what you are cooking, like maybe ground sausage) over med to med high heat. I don't know how it would be with rice or soy milk, but I think it would be worth a little trial and error to experiment!

made this up today... who knows someone mightve done it before though

1 lbs smoked sausage
2cans diced potatoes
1can green beans
garlic to taste

skillet fry sliced up sausage. add potatoes, add green beans. some garlic. stir and simmer till ready to eat.

One of our favorites is Cheeseburger pasta

A can of Cheddar cheese soup
a can of tomato soup
2 C elbow noodles
1 lb ground beef
1 1/2 c water

Brown the meat, drain. mix all ingredients in with the meat and then cover in a skillet. Cook for about 20 mins or until noodles are tender. You may have to add more water to it as it cooks.

1 can of whole corn drained
1 can of kidney beans drained
1 can of refried beans
1 packet of taco seasoning
1 packet of ranch dressing dry
2 cups of water to make broth.
brown meat with chopped onion add to big pot
add all canned itmems
and packets
and 2 cups of water. and walah taco soup.
serve with either tortilla chips or cornbread

I've included my refried bean recipe, which we use for bean/cheese burritos, tacos, chip dip or as a side to enchiladas.

Refried Beans:

3 cups dry pinto beans
1 onion, peeled and quartered
1/2 fresh jalapeno (or a few slices out of a jar is what I use)
2 Tbsp minced garlic
1 1/2 tsp pepper
1/8 tsp cumin (optional)
9 cups water
4 tsp salt (instead of salt, I substitute the 9 cups of water with 9 cups of chicken broth made with the chicken base you can buy at Sam's Club/Costco)

Directions:

Add all the ingredients to a crockpot and let cook on high for 7-8 hours (you can do this overnight if you want). When they are done cooking, blend the beans in the blender with just enough of the liquid to get a good consistency. You can also hold back some of the beans, and use the remaining beans/liquid to make a taco soup. Just add a can of corn and some taco meat. If you want to, thicken it with a few of the refried beans stirred in. I usually do this so none of it goes to waste. It's SO good!
