Don't forget about angel food ministries and share colorado (google them). They are both co-op programs that anyone can participate in to get a lot of food for a great price.

Emily's Spicy Beans
about 1.5 bags of beans - I use combo of kidney, black, pinto
can of rotel
coriander
hot sauce
salt
pepper - black, white, cayenne - any combination
cumin
minced garlic
Soak beans overnight. I'm guessing I use about 1 tsp of all spices, but tweak it throughout the day. After breakfast, put beans in crockpot with rest of ingredients. Cover with water. Cook on low. About two hours before dinner, check tenderness, bump up to high if needed. Sometimes I cook on high for the first hour, then turn down to low. You could also do it in a stockpot on the stove. Serve with rice, cheese or cornbread. Use leftovers for chili, any Mexican food. . . eat for days.

Ham and Cheese Pasta - Yum!

1lb pasta usually a shaped noodle and not traditional spaghetti, but you can use either)
1/2 c butter or margarine
2 cloves chopped garlic
1/2 cup AP flour
1 teaspoon salt
4 cups milk (I have used 1/2 milk 1/2 water with success too)
4 cups shredded cheese (motz, cheddar, colby, jack, etc..) you can cut this in half too with success
8oz sliced ham (I usually buy the bone in slice for around $2)
2/3c parmesan cheese.

Heat oven to 350, and cook pasta. In a 4quart oven safe pan, malt butter over low heat. Cook garlic in butter for 30 seconds, stirring frequently. Stir in flour and salt using a wisk. Cook over medium heat, until smooth and bubbly. Gradually wisk in milk. Heat to boiling, stirring constantly. Stir in cheese. Cook until cheese is melted. Stir in pasta nad ham, sprinkle with parm cheese. Bake 20-25 minutes until bubbly.

I cant believe I never thought to add these

Fried Potato Cakes
-------------------------
All you need is cooked mashed potatoes, 1 egg, flour, shortening and anything youd like to add in.

All you do is beat 1 egg into your mashed potatoes then mix. Form into patties and coat w flour. Put shortening in your pan and when its hot drop the pattie(s) onto it and cook till each side is slightly brown.

IF YOUD LIKE TO ADD IN SOMETHING (veggie, ham etc) add it in with your egg in the beginning. Uber cheap and a nice way to use leftovers! I like me some for bfast

De Boles makes a high-protein pasta which we eat with spaghetti sauce and a spinach salad. Definitely under 5$ if you go non-organic on the sauce and spinach. I usually go organic and it's still around $6 for 5 people. No one complains!

I LOVE potato pancakes, so I will have to try these. Do they taste like potato pancakes?

It depends on what you have on-hand that makes these dishes $5.00. [Liek soy sauce and garlic for instance] For some of you... they may very well clean out your pantry!!

These dishes are pretty healthy as long as you don't over due the soy sauce!


Buckwheat Chilli

Meat-lovers don't even realize there's no meat - makes a good lot and is quite filling

-2 16 oz cans diced tomatoes
-2 cans kidney beans
-3/4 c. uncooked buckwheat
-3 c. vegetable (or whatever) broth
Chili powder, garlic, paprika and cumin to taste

Boil 20 minutes - TADA!

Fried Rice

Even cheaper if you use the veggies you have on hand!

-2 cups cooked rice [1 cups uncooked] [$2.00]
-2 eggs [grab from a dozen you have $.20]
-1 onion [$.60]
-1 cup peas [grab from a frozen bag you have $.55]
-1 cup diced baby carrots [grab from a bag you have $.50]
-1 potato [$.50]
-garlic [$.20]
-soy sauce .. on hand?

Cook all veggies in oil [add onions... then carrots...then potatoes.. then garlic...then peas very last!], add cooked scrambled egg and cooked rice. Stir in as much soy sauce as you think is fit.... tada!

Quick Rice Topper

-4 cups cooked rice [2 cups uncooked] [$2.0]
-1 small cabbage head [$2.0]
-1 onion [$.80]
-1 can tuna [$1.0]
-garlic [$.20]
-soy sauce .. on hand?

Slice cabbage and onion. Start cooking onion in oil [med heat], once soft, add cabbage and garlic. Add soy sauce and tuna. Cook until it's just perfect for you. Top over a bowl of rice.. amazing stir fry!

Rice Noodle "Stir Fry"

-Rice Noodles ["cellophane" are my favorite - they come in hotpink mesh netting over the plastic or "rice stick" - asian section at Cub.] If using the cellophane noodles, don't use a lot -- 2 bunches will get you far!
-Any combination of favorite veggies fresh-or-frozen. [zucchini, carrots, onion, peppers!]
-Soy Sauce
-Sesame Oil
-Garlic to taste/ Ginger if you like.

Boil noodles. Drain. They'll be VERY sticky. Put veggies in pot to cook [i only use oil if they're fresh], Add sesame oil and soy sauce right away. Add noodles -- mix mix mix mix mix until well combined. Add soy sauce until well blended with noodles. I either eat this plain or serve over rice!

Buchimi
a Korean pancake

-1 cup all-purpose flour
-1 egg
-2 cups water
-Salt to taste - in batter. I use a few dashes.
-Strips of zucchini, bean sprouts, egg plant, green onions sliced [your choice] those types of veggies.

Mix ingredients well. Fold in veggies. Fry on medium-low heat to ensure it cooks through [they get thick] Dip in soy sauce with just a dash of vinegar. My younger cousin likes them cut in strips or like a pizza.
