Mexican Ramon Noodles

1 lb ground beef
2 packages beef flavor ramon noodles
shredded cheese (to taste)
salsa (to taste)

Brown hamburger, drain, and set aside. Cook noodles and drain. Add seasoning packets to noodles and stir. Add flavored noodles to beef. Add cheese and salsa to taste!

New to the form, but I just was wondering if anyone ever visited 5dollermeals.com she was not Rachel Ray and some of her meals are wonderful. Its always a proud thing for a SAHM to save money and cut cost where they can be cut.

Okay, a few of mine. I'm not sure on exact prices here, but I know they're usually very cheap:

#1, Chicken and Rice Casserole (feeds 2-3)

2 cups water
1.5 cups parboiled rice
2 regular cans or 1 big can cream of mushroom soup (big can if you like it creamy) I'm working on finding a mushroom soup recipe that tastes like canned...PM me if you know of one! Trying to get rid of MSG in my diet.
handful of cooked chicken pieces OR two small thawed chicken breasts

Spray smallish casserole dish with Pam or grease with Crisco. Mix water and rice well, make sure no rice is
left dry, then add soup. Mix till it looks most of the way homogenized. Add chicken. If using pieces, poke
them down into the mix. If using breasts, leave floating on top. Add pepper if desired. Cover with foil, bake at
375 for 45 minutes.

Also good without chicken, moderately okay with canned chicken. I buy big huge bags of frozen chicken breasts on sale or at Sam's club, then cook them all in water with carrots and celery, tear them up, and freeze in sandwich-sized containers so I just have to thaw one container partway to be able to pull out a handful of pieces.

#2, My variation on the easy tuna casserole

1 box Kraft macaroni and cheese or Velveeta shells and cheese (or noodles and homemade cheese sauce)
1 small can cream of mushroom soup (again, can replace with homemade)
1 can of chunk light tuna in water
Shredded Cheddar Cheese
Ruffles or Lays chips (don't use wavy lays. ever. for anything.)


Cook macaroni according to directions, including milk and butter (for kraft). Add soup and drained tuna,
transfer to baking dish, top with cheese and then crushed chips. Broil for 45 seconds to 1.5 minutes. Eat.

#3, Cheesy Chicken Broccoli Pasta

1 box of very textured pasta. I get the Radiatore from walmart, it's $1/box
1 can of cheapo offbrand cheeze-whiz type sauce, or homemade cheese sauce
1 chicken breast cut up and cooked in a bit of butter and garlic powder
half a bag of frozen broccoli

Microwave the broccoli in a big clear container (I use my 4 cup measuring cup) with a few tablespoons of water in the bottom. Stir every minute or two, until it's cooked like you like it. Meanwhile, boil the noodles till they're done but still firm, drain. Also cook the chicken with 1-2 tablespoons of butter and a good sprinkling of garlic powder or chopped garlic. Once all three are done cooking, and the noodles are drained, mix the cheese sauce into the noodles, add a splash of milk to thin it out a bit, dump in the chicken and broccoli, and enjoy! It's seriously one of the best meals I've ever eaten.

Okay now that I have more time, I'll add one.

Spicy Potato Soup!

5/6 md or lg potatoes
1/2 lb spicy breakfast sausage
1 onion
3 cloves garlic
a squirt or two of yellow mustard, to taste
a little milk or cream for consistency/flavor
spices, to taste (I use salt, pepper, cayenne,and parsley...sometimes I add rosemary for kicks)

1. Chop the onion and garlic and put into large pot. Sprinkle with salt and stir.
2. Turn heat to medium to cook and add the sausage at this point as well. You can drain it if you want but I usually just leave it.
3. Chop and add potatoes.
4. Add 4-6 cups of water or stock (or a mix of both) and turn heat to high
5. Add spices to taste and let boil down, stirring occasionally. Some of the starches from the chopped potatoes will help to thicken the soup as it cooks. If you prefer it thicker, add some flour or whatever thickener you like
6. When almost done, stir in the mustard and milk/cream to taste. Turn down the heat and continue to occasionally stir until it's cool enough to eat.

When I have them, I sometimes add carrots or celery to the onion and garlic. You can also leave out the sausage but my husband misses it.

Okay well having read ALL of the pages... i thought i would add just a few -

Growing up my mom refused to cook a big dinner on Sunday's so she made this:

Huge bowl of homemade popcorn
Cheese Slices
Apple Slices

Even my teenage brothers looked forward to "popcorn" dinner

the best is KD and ground beef! you cook them seperate and then mix them together. This cost's me about $5 and feeds my household of 3 boys, 1 husband, and me! add a side of salad and it's a full hearty meal.
