Please don't laugh at me...but I tried dirty rice and sausages and I was SHOCKED at how spicy it is! I love spicy foods, so it was ok for me but poor DH...his stomach can't handle it!

It was really really good though and I will be making it again and adding things like celery, chopped tomatoes, and onions to it next time.

Easy Chicken Bake is also SUPER SUPER good with curry stirred in. It sounds odd but is my favorite casserole. If the idea makes you nervous just have some on the table next time you make it and sprinkle it on a few bites. We do make our chicken bake with green beans instead of mixed veggies but I wouldn't imagine it makes much of a difference

So I'm gonna shred up a lone potatoe we have left over hopefully it works out made some homemade rolls and we'll have a frozen veggie of some sort

Yummy Tomato Chicken

I made this last night when the cupboards were nearly bare of ingredients that went together. I didn't want Italian, so I did a little experimentation that worked better than I thought it would. You'll be surprised at the wonderful way chili powder, cinnamon, and tomatoes go together. Cinnamon and tomatoes are a common combination in Middle Eastern dishes, but the chili powder kicks it up a notch.


*Slightly brown chicken pieces in a little butter or olive oil (butter's best and I added about a tablespoon of sweet red wine because I had some).
*Add a can of crushed tomatoes
*Add salt and pepper to taste, 3 shakes of garlic powder, 3 shakes of chili powder, and 1 shake of cinnamon
*Cover and simmer until the chicken is done through
*Serve over spaghetti or other pasta.

I just always keep extra sphagetti, sauce, canned vegis, rice, and salsa in the pantry or I can make a salad - last time I had no croutons, so I broke up some saltines on top - Mayo mixed with a few drops of vinegar makes a great salad dressing. I also do double coupons at Homeland - I watch for the 0.75/$1 coupons for Lipton and Knorr and get the rice/pasta sides when they go on sale - this is a fast easy dish with some canned or frozen vegis or fruit. :stir:
