Broccoli Lemon Chicken.

Get a can of cream of broccoli soup and follow the directions on the back. LOL. You basically brown the chicken, add the can of soup and some milk and some lemon juice, top with lemon slices if you want (but that's extra and unncessary expense), cook until chicken is done. I serve it with rice. YUM. It's dinner tonight and it's done!!!

here's another:
i get a box of zatarain's dirty rice and add ground beef.....my kids (2yo and 4yo) inhale it. yum!
and another:
i get 2 pkgs of sweet yellow cornbread (48 cents at walmart per package) and get a bag of pinto or great northern beans and have that for dinner....that one is under $3! and we eat that for days! mmmmm! it's actually on the menu this week...woohoo!

mushroom chicken
get 9x13 baking dish
put uncooked jasmine rice on the bottom (coat the bottom with one layer of rice)
place thawed boneless/skinless chicken breasts on top of rice
mix cream of mushroom soup with milk and pour over chicken, use two cans if you need to cover chicken
bake for about 20-25 minutes on 375F

I make this and then fry up some crookneck squash (summer yellow squash for you Yankees ) and zucchini in butter.

My family LOVE this:

Sausage and rice casserol

1 roll of sausage (cost anywhere between $1 and $3?)
2 cups dry rice (makes 4 cups cooked)
2 cans of cream of mush. soup
salt, pepper and garlic to taste

brown sausage while cooking the rice, in a big bowl mix the mush soup, salt, pepper and garlic add all the ingre. to that and put into a casserol dish. Bake at 400 deg. until hot all the way through.

Super cheap!

Here is one my hubby loves!

Brown ground meat (beef or turkey)
Add a can of cream of mushroom soup cook to heat soup.

Serve over toast and w/ a veggie or salad.
I bet you can do this w/ like $3 depending on how many you are feeding. He comes from a large family and his mom made this all the time. She made 2 lbs of meat and 2 cans of soup. It is kind of like a sloppy joe, but w/ cream of mushroom soup. I have seen this in a cookbook w/ cream of celery, but I an not sure I would like that as much.

A bit labor intensive, but incredibly cheap...

Homemade chicken and noodles.

Whole chicken ($3-4)
Homemade noodles

Boil chicken all day till falling off the bone. Add whatever seasonings you like. I do a simple, onion, bay, salt, pepper, garlic.

Make noodles by mixing season salt, flour and eggs until you get a pasta type mixture (I use 2 eggs and add flour till I get right consistency). Will be very thick dough. Roll out VERY thin and let sit for about an hour to dry a bit. After slightly dry cut into noodles. (If you don't wait for it to dry, it will be a huge mess when you cut!)

After chicken is cooked pull meat off bones, save broth. Strain broth and add back to pot and add chicken. Bring to full rolling boil and add noodles.

Serve over mashed potatoes. Like I said, labor intensive but so so worth it!!
