WWYD? Freezer cooking ideas needed FAST

I have a very good friend who runs the local co-op. She knows my 16 month old loves green beans (and that DH has been unemployed for half a year now) so she gave me a call to come pick up a box. She had ALL of this food to give to us. Most of it has soft spots (and I have to sort through the 15 lbs of green beans) or sprouts, but I can work around that for the most part.

So.. what would you do with all of THIS? I need to cut, blanche, prepare it all today or it's out to the compost bin (we have a busy weekend ahead of us).

Trim the green beans, blanch them in boiling water (1 minute, I think), then drain them and lay them out on cookie sheets. Freeze them until they are solid, and dump them into freezer bags. (If you freeze them on cookie sheets you'll have loose beans instead of a solid chunk o'beans.)

Make refrigerator pickles with the cucumbers. If you have two cucumbers, you can make a half-batch of Wilted Cucumbers:

Is that a big onion on the left? Trim any bad spots and stick it in the fridge (double-bagged if you want to avoid an onion-smelling fridge). Use it the next time you need an onion. Same for the carrots--trim any bad spots and stick them in the fridge.

I'm sorry, I don't know what to do with the tomatoes or potatoes. Other than DON'T FREEZE POTATOES, they'll turn grey and nasty.
