Sinfully yummy kettle corn

I am eating a bowl of homemade kettle corn - it is absolutely the most yummy snack I've had in ages!

Stainless steel mixing bowl + pair of sturdy tongs and foil over the stove is how I popped it (Alton Brown's method). It came out absolutely perfect. You just pop over med heat on the stove top and shake alot - lol.
oil about 1/4 - 1/2 an inch deep in the bottom of the pan
1/3 cup popcorn
1/3 cup sugar

You can do regular pop corn this way too (just leave out the sugar & cut down the oil a touch) - way healtheir than microwave stuff, and it's stuff we already had around the house (no big noisy air popper needed). It smells better, too.

I am in heaven.

When do you add the sugar? We use the AB popcorn method and dd would love to make kettle corn.

Right at the beginning - I pour it in on top of the popcorn and oil. You definately have to keep it moving, and get it off the stove quickly after it's done, but we haven't had more than just a touch of scorched sugar both times we've tried, and believe me it hasn't affected the flavor of the rest of the popcorn!

For true kettle corn salty-sweet flavor, just salt a little after you take it off the heat. I want to try it with brown sugar next - I am thinking that might be more like carmel corn. Yum.

What is the AB method? I love Good Eats, but haven't seen that episode! And naviagating through the food network website is sooooo slow!

You take a big stainless steel salad bowl and a pair of metal salad tongs, and clip the tongs onto the side of the bowl to make a handle. We use ones that have a little metal loop that you can pull down to lock them on.

Then you put oil in the bottom of the bowl - enough to just cover the popcorn. Add a little extra if you are making kettle corn - it seems to help keep the sugar from scorching as badly. Alton Brown says peanut oil, but we use canola with no problems.

Put in about 1/2 - 1/3 cup of popcorn - so you have about 1 layer on the bottom of the bowl.

If you are going to add sugar for kettle corn, add 1/2 - 1/3 cup now.

Cover the whole thing tightly with aluminum foil - make sure you get it snug around your salad tong handle, or the oil and steam will spit up onto your hand/arm.

Cut a bunch of little slits with a knife in the foil for steam.

Put over a burner (gas is supposedly easier, but we have electric and it works fine, I just preheat the burner so I don't have to wait forever), and shake it back and forth constantly. I use a hot pad gloove thing to further protect my wimpy hand/arm.

It will take a few min to start popping, but once it does, it goes fast.

Keep shaking until the popping starts to slow, then take it off the heat. Don't try to wait until it's completely done popping, or it will burn.

Add toppings, popcorn salt (put regular salt in a food processor to make it finer), butter, whatever. For authentic kettle corn flavor, you would salt ligltly on top of the sugar.

Eat up! Yum!

I LOVE Alton Brown-- and he LOVES peanut oil. I use canola oil with no problem as well. I love that kettle corn-- it tastes soo good, and is so much more fresh tasting than microwave-- I'll never go back to microwave again!!!

we make regular popcorn this way.. i never thought to add sugar!!! and the brown sugar thing shounds awesome!! Just the thing my sweet tooth wants!
