Coconut milk recipes

I did a search for recipes and didn't come up with much (as much as I expected anyway). Does anyone have any good recipes they wouldn't mind sharing?

Coconut Milk Rice Pudding is yummy - basically just make rice pudding, using coconut milk instead of regular!!

Orrr, I make a really yummy pasta dish - I use the tiny shells of pasta, cook them, drain water, add some garlic & chilli (obviously not to everyone's taste, but easy enough to add your own flavours, or just use plain coconut milk) and then add the coconut milk and simmer until it starts to thicken up

Those are the only ones I can think of currently...milkshakes made with coconut milk can be good? Chicken and coconut go together quite well, so baking some chicken breasts in coconut milk.... Just some ideas off the top of my head (I'm a bit experimental in the kitchen )...

Thanks for posting,I was wondering myself as I have a few cans in my pantry.

I think my MIL pokes little holes in her baked cooling vanilla cake layers and pours the coconut milk over cake.Then she frosts w/ white fluffy coconut icing to make coconut cake.

Butternut squash and shrimp with coconut milk!
SERVES 4

* 3/4 cup fat-free low-sodium chicken broth
* 1 1/2 teaspoons brown sugar
* 1 teaspoon salt
* 2 teaspoons tomato paste
* 1/4 teaspoon crushed red pepper flakes
* 1/4 teaspoon fresh ground black pepper
* 1 (14 ounce) can light coconut milk
* 2 cups butternut squash, 3/4-inch cubes
* 1 cup red bell pepper, julienned
* 1 lb large shrimp, peeled, deveined and halved lengthwise
* 2 cups hot cooked basmati rice
* 1/4 cup fresh lime juice
* 3 tablespoons minced fresh cilantro

1. Combine chicken broth, brown sugar, salt, tomato paste, crushed red pepper, black pepper and coconut milk in a large saucepan and stir with a whisk.
2. Stir in squash and bell peppers.
3. Bring to a boil.
4. Reduce heat and simmer for about 10 minutes or until squash is tender.
5. Stir in shrimp.
6. Bring to a boil and cook for about 1-2 minutes or until shrimp are done; stirring occasionally.
7. Stir in rice, lime juice, and cilantro. Heat for 2 minutes.
8. Serve!

I make yellow curry with pretty much anything.
1. Chop potatoes and carrots and boil in a small pot until almost done. Set aside.
2. Over medium heat sautee 1/4 chopped onion in a pot with oil. Add 1tbs yellow curry paste and 1tbs yellow curry powder. Mix well.
3. Add one cube of palm sugar or 1tbs of brown sugar and mix well.
4. Open coconut milk and don't shake or stir the can. Using the spoon add just the creamier part from the top. Mix well.
5. Add 4tbsp fish sauce and remaining liquid from the milk. Lower the heat and cook for few minutes.
6. Add potatoes, carrots, 1/2 of sliced onion (chicken or tofu) and any other vegetables (frozen veggies work great). Mix well, cover the pot and cook for 8-10 minutes.
7. Serve with rice.

I make the best Coconut milk soup !

Here is what you need

3 potatoes washed and diced peel if you want
3 carrots diced
1 onion chopped
1 stick butter

Put all these ingredients in a pan put heat on medium low and stir ever so often until potatoes and carrots are almost tender then add:

1 can coconut milk
1 1/2 cups of water less if you want it more creamy
1tablespoon rosemary and thyme
S&P to taste

You can also add corn and bacon if you want to make it into a chowder!

It is fast and everyone just loves it

This is a super easy recipe to make with coconut milk, and it's amazingly good for you!

Vegan Curry Lentil Dahl

16oz dried lentils
12oz can coconut milk
2 cups brown rice
organic baby spinach
curry powder
soy sauce

Boil lentils in large pan until almost tender (woks work well)
Steam rice
Add coconut milk to lentils and curry/soy sauce to taste
Simmer untill beans are tender (you should have some liquid left in pan)

Scoop generous portion of rice onto plate
Top with fresh spinach
Drizzle lentils over spinach

So Good!!

I usually make curries with mine, or a lemongrass soup that is thick and uses some odd ingredients.

I tried the Potato coconut milk soup and it was soOo good!
