Anyone have a great mac and cheese recipe?

I am ISO mac and cheese recipes. Our family loves mac and cheese, but it seems like every boxed mac and cheese is either yucky or full of ingredients I don't want to put in my kids (HFCS, artificial colors, artificial sugars, artificial flavors, etc), so I'm looking for a really good mac and cheese recipe, preferrably made in a crock pot, but baked is fine, too. Thanks

This one is a little complicated, and extremely unhealthy, but I can attest to its deliciousness! When I was pregnant, I had some serious mac and cheese cravings, and the mom of one of my students made this for me a few times. It's nice to be a teacher!

I wish I had a good slow cooker mac and cheese recipe, but I've never had good luck with it. I'll be watching this thread for other good ideas....I do love me some mac and cheese!

This one is not healthy by any stretch of the imagination, but it is soooooooo delicious! The white cheddar and touch of gruyere/romano is the perfect combination!

Re: Anyone have a great mac and cheese recipe?

This is how I make mine....more of a method, less of a recipe....

In a saucepan, make a roux with 1/4 cup butter and 1/4 cup flour, cook over medium until lightly browned. Stir in either 2 cups milk, or a 12 oz can of evaporated milk and an additional 1/2 cup milk. (Evap milk makes it SO creamy, but regular milk works okay, too.) Stir constantly until it starts to thicken, throw in about 8 ounces (or a little more is okay, too) of shredded cheddar. I use extra sharp, but any cheddar or combo of cheeses works. Remove from heat. Stir in about 2 Tbsp of worcestershire sauce. Salt to taste, if needed. When cheese is melted and incorporated into the sauce, pour over 1 lb of cooked and drained pasta and stir well to combine. Bake until bubbly (or microwave for about 5 minutes) before serving.

Here is a healthy one!

whole wheat noodles (cooked) whatever shape

12 oz silken soft tofu- blend in blender or processor to insure smoothness

in saucepan combine tofu and 2 c. shredded cheese. I use white cheddar but you can do yellow if you want the color.

simmer on low to med-low until cheese is melted.

mix sauce with noodles

It is SO good and even better the next day!

Crock Pot Mac 'N Cheese

8 - 16 oz macaroni noodles, cooked and drained
4 c shredded cheddar cheese
1 can (12 oz) evaporated milk
1-1/2 c milk
2 eggs
1 t salt
1/2 t black pepper

Spray inside of crock pot with nonstick spray. Add macaroni. Mix 3 cups of the cheese, milks, eggs, salt & pepper. Stir into macaroni. Sprinkle remaining cup of cheese on top. Cover and cook on low 5-6 hours until mixture is firm and golden around the edges. DO NOT REMOVE COVER OR STIR UNTIL DONE!

I just make regular mac and cheese, but Tillamook has an annual recipe contest- $5000 for the best mac and cheese recipe. So if you have a great one, you might want to try entering!

Re: Anyone have a great mac and cheese recipe?

Here's my baked mac and cheese recipe.

Spray a 9 x 13 pan with Pam.
Layer 1 lb uncooked elbow noodles with whatever cheeses you prefer. I use mozzarella and monterey jack and colby cheddar.
Dot the top with softened butter or margarine.
Pour 5 cups of milk over the top.
Bake at 350 degrees for 1 hour.

So easy and comes out delicious!
