What can I substitute for butter?

I have some bananas that are VERY ripe. I figured I'd make banana bread. But I have no butter, and we are TOTALLY broke until payday.

I have shortening (vegetable), coconut oil (it's semi solid a little softer than shortening), olive oil and vegetable oil.

Any thoughts?

ETA: you've inspired me to make the recipe with shortening – I have some Jungle brand non-hydrogenated shortening that was quite expensive and I don't want it to go bad from age! So I'm going to take my two very ripe bananas (which had previously been destined for smoothies) and go for it! I think I'll bake mine in muffin cups.

you can also sub apple sauce or any thicker fruit puree in place of butter but id do 1/2 and 1/2 with shortning or oil

Keep in mind…butter is only 80% fat (20% water), while lard, oil and shortening are 100% fat. SO, you'll need to adjust accordingly (scale back the lard/shortening by 20% and add 20% more liquid) for a recipe…otherwise, you can't expect the same results.

I have always used the Fannie Farmer banana bread recipe and it has no oil anyway. You don't have to add applesauce or anything, banana's work just fine on their own. I like using this recipe because then I can justify putting a lot of butter on my toasted slices later.
