Are you trying to get away from a cream soup altogether, or just get rid of the canned version with sodium, MSG, preservatives and such? If it's the second option, I use this recipe from Pioneer Woman. I make a big batch using a whole container of mushrooms (about 7 cans worth) and freeze it in smaller portions to use in casseroles and such as needed.

eta: sorry, I think I misunderstood, I just realized you were asking what you can use in place of cream of mushroom soup - I'm not sure, sorry!

The homemade cream of something recipe above does sound so much better than any canned version! hehe

I am looking for an alternative to the canned stuff, we are trying to stay away from canned/ processed foods, the recipe you gave was good!

unfortunately for us it meant changing the way we cook as we are also a can free family. I did try frontier's powder version but it does not cook well lol

I made the Pioneer Woman recipe the other night, it worked very well. I actually needed a can of cream of mushroom and a can of cream of celery soup, so I doubled the recipe and cooked up both mushroom and celery for it! There is a powder cream of something version somewhere, but that only works in some recipes because it could separate I guess.

I just make a simple white sauce of butter, flour, and milk, then season however I think would work best for the recipe. That seems to sub fine for canned soup. I can't stand canned stuff other than, like, tomato paste or olives, so I sub stuff in recipes all the time. This one is a really quick and easy stand-by for me.
